The “MoMix” in MoMix Bar stands for Molecular Mixology. The utilization of the findings of molecular science by bartending and mixology in order to create an unprecedented taste experience.
The first Molecular Mixology Bar in Greece may have sounded like a “crazy” idea. Because, it was established at the Kerameikos area in times of deep economic crisis (2012). But it very rapidly expanded with another Bar at Glyfada (Athenian Riviera) and a third in Santorini, one of the most famous islands in the world. Extraordinary cocktails in small spoons, tubes, plates and bowls in the form of mousse, gel or foam, are served there!

In early 2015 they decided to create a space for the implementation of a dream. The MoMix Bar lab, where during endless hours of research and interaction with scientific staff, they constantly analyze and plan the development of MoMix.
In 2021, following the new conditions due to COVID19, a radical enhancement was made not only by changing the location to the heart of Athenian nightlife – Gazi, but also the operation to an all-day bar being focused on its molecular mixology philosophy.

Moreover, the Greek academic community embraced the effort and acknowledged innovation, giving MoMix Bar the chance to give step through workshops, conferences and lectures in institutions such as the University of Athens – Chemistry Department, Agricultural University of Athens –Nutrition and Metabolism Section, Athens Science Festival, etc.
MoMix Innovation Team is inspired by scientific, research and professional level creations. Taking part in many events in Greece, and memorable ones abroad, such as: in London on the day of Halloween-guests from Novikov group, in Mexico City-guests of Olmeca tequila and Pernod Richard Mexico, in Munich’s Intersolar Exhibition have given experiences both to consumers and to the members of MIT.
Partnerships with major brands have given quality to the product and the benefits of MoMix. Sponsoring by companies such as Absolut, Havana Club, METAXA, Stolichnaya, Jagermeister, Marlboro, Heineken strengthen the corporate profile and foster innovation through synergies.
Furthermore, vital part of MoMix Bar culture are team building activities, corporate and pop up events offering unique experiences that highlight the essence of bartending and food technology.
Molecular Mixology is the use of chemical compounds to mix and shape materials in order to bring out flavors and aromas. The combination of bartending and confectionery gives the opportunity to taste the senses.

Techniques such as spherification, gelation, vaporization, the use of dry ice, liquid nitrogen, hydrocolloids and many other food additives give another dimension to what we have known so far about the consumption of beverages.
